Cheese coating for natural cheese ripening

The way in which cheese ripens determines the flavour. There is a huge demand for cheese that has a natural appearance. Consumers want to taste the characteristic flavour of naturally ripened cheese. The treatment of the rind plays a crucial role in natural ripening. A cheese coating enhances the quality of the natural ripening by offering protection against fungi and yeasts. The cheese coating of CSK food enrichment improves the appearance of semi-hard and hard cheeses, making them appealing to consumers.

Key influences on cheese coating application

The following factors influence the various properties of the cheese coating:

  • type and form of cheese;
  • type of cheese vat;
  • cheese rind moisture content;
  • type of flapping machine;
  • flapping machine capacity;
  • cheese coating dosage.

When calculating the proper dosage certain factors must be considered, such as the plasticize machine settings, storage tank pressure, level of the storage tank and the viscosity of the cheese coating.

The viscosity is influenced by the machine and piping system, the pumping method, the temperature of the cheese coating, and the
pressure in the piping system for the plasticize machine.

Product description, composition and characteristics

CSK’s cheese coating is based on high quality aqueous synthetic dispersions. These do not contain any weakeners. Ceska®-coat is suitable for use with the so-called flapping machine or for application with a sponge. (See also Appendix 1 for more information on applications with varieties of Dutch cheese).

Ceska®-coat is especially recommended for the surface treatment of semi-hard and hard cheeses which includes different varieties of Dutch, German, French and Italian cheeses. CSK develops the cheese coating that fulfils your wishes. Ceska®-coat is available in a wide range of colours including a variety of yellow tones (annatto or carotene), black, white, green, red etc. You also have a choice of structures and matte or gloss. Depending on the intended application, it is available with or without inhibitors against yeast and moulds in different varieties and concentrations. Ceska®-coat complies with the specifications for cheese coating products set down in the Commodities Act. (See also Appendix 2 for more information about the various options).

Properties and advantages

As soon as it is applied to cheese, Ceska®-coat forms a film with a number of important properties and advantages:

  • Protects the rind against mechanical and microbiological damage (limits risks);
  • Limits and reduces excessive weight loss (dehydration) without influencing the ripening process;
  • Standardises the quality of cheese;
  • Promotes ripening: positive influence on the flavour and texture of the cheese;
  • Protection during transport and storage; option to add paraffin layer to Ceska®-coat;
  • Improves the presentation of the cheese; choice of labels.

 Packaging and storage conditions

Ceska®-coat is available in 25 kg buckets for single use, 25 and 50 kg export drums, (stainless steel) containers of ± 1000 kg and bulk transport of at
least 20 tonnes. Additional options are available by agreement.

Ceska®-coat will keep for six months, provided it is stored in the closed original packaging between 5 and 25 °C.

New product line

The cheese coating plays a crucial role in creating new types of cheese. Consequently, CSK has decided to continue developing and expanding its
Ceska®-coat product line. CSK wants to offer cheese manufacturers readymade cheese coating solutions that can raise the value of cheese. With
attention to specific technical aspects and legal requirements, CSK works with customers to develop concepts for:

  • spray applications;
  • improved shelf life of (coated and) paraffin coated cheese;
  • dip applications;
  • edible cheese coating;
  • easy to peel, highly suitable if the cheese coating must be removed later;
  • easy to slice;
  • water-resistant properties;
  • optimising the ripening protocol at increased temperatures.
