Introduction

Although it had already been around for thousands of years, yoghurt was more or less rediscovered in the early 20th century. The scientist Metsjnikov described a long list of health aspects to it. Yoghurt was marketed commercially for the first time in Barcelona by Isaac Carasso, who named his business after his son, Danone (Catalonian for ‘little Daniel’).
Today, yoghurt is the fastest growing segment in the dairy market. Sales of yoghurt and yoghurt-like products have risen tremendously as a result of the product’s healthy image and the emerging probiotics trend. Yoghurt is clearly the dairy industry’s most innovation segment: probiotics, prebiotics, indulgence, fruit yoghurts, breakfast products, snacks, slimming. Every trend imaginable is represented in the yoghurt products group.

Types

We distinguish yoghurt into three types: Set, Stirred and Strained. In each of these segments there is a demand for traditional, mild and extra mild varieties. The desired viscosities and structures vary significantly among regions and markets. There are also many types of yoghurt-like products that are popular among consumers. CSK food enrichment has a complete portfolio of yoghurt cultures that effectively meets all market demands.

The traditional segment

The traditional segment is characterised by high yoghurt aroma levels and low pH levels. In most markets, this segment is regarded as the yoghurt market with a low added value. CSK has cultures that are well-suited to meet the demands of this segment.

The mild segment

As part of the development programme CSK has introduced a number of new cultures (the Y-range) that are highly suited to the mild yoghurt segment. These cultures are widely used

The extra mild segment


‘Extra mild’ is an emerging segment. The goal is to develop products with a pH >4.4 on the final date. CSK has tailor-made solutions for your products.
For probiotic yoghurt-like products, CSK can blend different cultures with probiotic strains, like Bifido bacteria and/or L. Acidophilus, which are included in the A and B range. Very mild products can be made this way, too. CSK also has cultures in its collection for products such as drink yoghurt and Rhyazenka.

Stabilising Systems

In addition to the extensive line of cultures, CSK also has a range of Stabilising Systems that can positively influence your product’s rheology and shelf life. We work with our customers to develop finished products that respond to consumer preferences and meet retail demands.
